This Creamy Sausage Gnocchi Soup is hearty comfort food for the colder months! It’s made with Italian sausage, fresh spinach and potato gnocchi! Ready in just 30 min! You’re gonna want seconds of this soup!
Sausage and gnocchi soup sounds delicious in itself but, making it a cream-based soup and adding fresh spinach puts it over-the- top delicious! It covers all of the food groups too. I just love the browned sausage bits and you will too.
You can make this wholesome soup for dinner and serve it with crusty Italian bread. Or, you can make it for game day or any event where people gather. Be sure to read the substitutions and additions section below.
Gnocchi is a wholesome comfort food that’s an easy weeknight dinner: Gnocchi Carbonara or Creamy Garlic Mushroom Gnocchi.
I like making homemade soups not only because they’re fresh and have little or no preservatives but, also because I control the sodium. It’s healthier. In the end, I have a high-quality soup that I just can’t buy in a can.
Creamy Sausage Gnocchi Soup
Don’t let the ingredient list intimidate you because the ingredients are BASIC. Each ingredient has its meaningful purpose. Plus, most of the recipe is just dumping, pouring and stirring.
There’s very little prep as in- chopping an onion. You can handle that. I find that soup recipes typically have a longer list of ingredients. I’ve used only the ones that are necessary to make this delicious fresh soup!!
To make this soup, you’ll brown the sausage and remove it. Then, you’ll add butter, onions followed by some flour. Cook it a little and then add half and half (or heavy cream if you wish) and then chicken broth. Bring to a boil and then reduce heat and add in the gnocchi and spinach. About ten minutes later, you’ll add the sausage again to reheat it and let the flavors meld. Mmmm so delicious!
By the way, this soup will thicken and become more flavorful as it sits. I was so disappointed to find out my husband at the rest of this soup. Ugh… I’ll have to make more. Couldn’t you just eat a bowl right now?
Substitutions and additions:
- Use frozen spinach instead of fresh, although fresh is better.
- Use sausage links cut into 1/4″ pieces.
- Instead of sausage, try this recipe with shredded chicken!
- Vegetable broth can be used instead of chicken if that’s all you have on hand.
- Use heavy cream or whole milk instead of half and half.
- Add diced carrots at the time of the onions.
- Make it vegetarian by omitting the sausage and add 8 oz more gnocchi.
- Use dry packaged gnocchi instead of frozen if you prefer.
Write down your list of ingredients needed to make this delicious soup. Your family is going to LOVE it! Take note: this recipe makes about 4 servings or 6 small servings so you may want to double the batch especially for those who’ll want seconds.

Italian Sausage and Spinach with Ziti

Creamy Sausage Gnocchi Soup
Ingredients
- 1 tbsp extra virgin olive oil
- 1 lb ground Italian sausage or remove casings
- 4 tbsp butter
- 1 cup chopped onion
- 4 tbsp flour
- 1/2 cup half and half or heavy cream
- 32 oz chicken broth or vegetable broth
- 8 oz potato gnocchi
- 6 oz fresh leaf spinach
- 1/4 tsp garlic powder
- 1 tbsp corn starch
- salt and pepper to taste
Instructions
- First, in a dutch oven or large pot on high/med heat, add oil and Italian sausage. Cut into the sausage to break it apart into small pieces. Brown sausage for 5 minutes. Remove from pot and place on a plate. You'll add it back to the pot later.
- Next, add butter and onions to the pot. Cook for one minute. Add flour and stir.
- Then, stir in the half and half followed by chicken broth. Cover and bring to a boil.
- Next, add gnocchi and spinach. Cook for 5 minutes.
- Then, add the browned ground sausage, garlic powder, corn starch, salt and pepper to taste. Sir and let cook five more minutes or until sausage is fully cooked.
