If you’re like me and have teens living in your house, you need filling dishes they can pull out of the fridge, heat and eat. This is great for them and easy for you to make.
Soup out of a can loses its luster once you have a nice homemade soup to eat and without a lot of effort. Ever find brown spots on the carrots that come out of a soup can?
How about biting into overcooked noodles? Who even knows how long it’s been sitting in that can in all of those preservatives that dim its flavor.

What if I don’t have cooked chicken?
You can poach a chicken breast on the stove top while you’re getting this recipe started. By the time you finish cooking the chicken breast, the noodles will be cooked and ready to receive the chicken.
If you’re poaching the chicken, don’t throw away the water in which the chicken was cooked because you can use that as part of the 8 cups of chicken broth you need to make this recipe. It will add more fresh flavor to it.
Alternatively, you can use storebought rotisserie chicken instead. Use white or dark meat, whichever you prefer.
What kind of egg noodles do I use?
You can use wide egg noodles, medium egg noodles or similar type pasta. Egg noodles are the traditional pasta to make chicken noodle soup.

TIP: Because onions are an important ingredient for cooking, I alway have a bag of frozen chopped onions in my freezer just in case I ever run out of onions. It has come in handy when my husband used up the fresh onions and didn’t tell me (eye roll) we were out of onions.
Ingredients

- egg noodles
- chicken broth
- extra virgin olive oil
- all purpose flour
- garlic
- onions
- celery
- carrots
- thyme
- heavy cream
- cooked chicken (white or dark meat)
Summary Instructions
First, sautee the onion, garlic, celery, carrots and thyme in olive oil for a few minutes. If you don’t have cooked chicken, put a chicken breast cut in half in 2 cups of water and boil it on your stovetop for about 10-15 minutes. Be sure it’s cooked in the thickest part. Cut it into bite sized pieces before adding it to the soup.
Then, stir in the flour.
Next, add the chicken broth and bring to a boil.
Then, add the egg noodles and cook for about 7 minutes.
Then, stir in the cooked chicken followed by the heavy cream. Let the cooked chicken and cream heat up for a few minutes and it’s done and ready to serve!
This creamy chicken noodle soup tastes even better the next day when all fo the flavors have melded.

One Pot Authentic Homemade Italian Wedding Soup

Ingredients
- 3 tbsp extra virgin olive oil
- 1/4 cup chopped onions
- 4 cloves garlic, minced
- 1/3 cup chopped carrots
- 1/2 cup chopped celery
- 1/4 tsp thyme
- 2 tbsp all purpose flour
- 8 cups chicken broth
- 1 cup cooked chicken (white or dark meat)
- 1/2 cup heavy cream
Instructions
- First, sautee the onion, garlic, celery, carrots and thyme in olive oil for a few minutes. Then, stir in the flour.
- Next, add the chicken broth, cover and bring to a boil.
- Then, add the egg noodles and cook for about 7 minutes.
