This pasta dinner encompasses not only some great flavors but, it’s filling too, so a little goes a long way. It has gnocchi, chicken, sun dried tomatoes, spinach and Parmesan cheese in a creamy and delicious sauce.
Gnocchi in cream sauce is so so good! My Creamy Garlic Mushroom Gnocchi is evidence of this. Plus, it’s an economical meal because it’s a meal stretcher. You use leftover chicken, and not a lot of it too, mixed with filling pasta.

One of the few memories I have of my late grandmother was of her making gnocchi in her kitchen in Italy. I have many of her Italian recipes. She was a great cook.

What is gnocchi?
Gnocchi are Italian style dumplings made with flour, eggs, potatoes and salt. It’s served with traditional tomato sauce (gravy,) cream sauces or even pesto. It’s also used in soup such as Creamy Sausage Gnocchi Soup.
Creamy Chicken and Sun Dried Tomato Gnocchi

Ingredients
- 14 oz frozen gnocchi
- 1/2 cup heavy cream
- 1 cup chicken broth
- 1/3 cup sun dried tomatoes
- 1/3 cup grated Parmesan cheese
- 1 cup cooked chicken breast (boneless and skinless)
- 4 cloves of garlic
- 1 tbsp extra virgin olive oil
- 1 cup fresh baby spinach leaves
The cream sauce thickens as it sits so no corn starch is needed. It’ so tasty.
If you’re wondering if you can use marinated sun dried tomatoes, the answer is yes. I cut them into smaller pieces first.
You may also use grilled chicken for this recipe however, don’t use grilled chicken that is heavily seasoned with other flavors that will not go with the ones in this dish.
If you don’t have leftover chicken, just poach a boneless, skinless, chicken breast in a small pot in boiling water for about ten to fifteen minutes. Cut it in half for faster cooking.

You can substitute cooked turkey breast in this dish if that’s what you have one hand. Make it vegetarian by omitting the chicken.

Creamy Chicken and Sun Dried Tomato Gnocchi
Ingredients
- 4 cloves garlic, minced
- 1 tbsp extra virgin olive oil
- 1 cup chicken broth
- 1/2 cup heavy cream
- 14 oz frozen gnocchi
- 1 cup cooked chicken, cubed
- 1/3 cup sun dried tomatoes, cut into strips
- 1/3 cup grated Parmesan cheese
- 1 cup baby spinach leaves
- salt and pepper to taste
Instructions
- First, add minced garlic (4 cloves) to a large skillet with olive oil (1 tbsp.) Sautee garlic on med/high heat for about two minutes but, don't let it brown so don't walk away from the stove.
- Next, add chicken broth (one cup) and heavy cream (1/2 cup) and bring to a simmer for (about 3 minutes.)
- Then, add frozen gnocchi and cook for about 5 minutes.
- Next, add chicken and sun dried tomatoes. Cook another two-three minutes. Add grated parmesan cheese, salt and pepper to taste.
- Last, stir in spinach and remove from stove. Spinach will wilt in a couple of minutes.
