I remember coming home from school when I was a little girl and find homemade cookies that my mom had made just for me! It always made me feel special. I like to do the same for my boys now. It’s the memories of mom’s baking that’ll they’ll remember for a lifetime.
These cookies are simple but, with good flavor and texture. I suggest using plain or vanilla granola. You can add chopped pecans or walnuts to this recipe if you’d like. Add white chocolate chips or even semi-sweet chocolate chips! I’m pretty sure that would be awesome!

Chewy Cherry Granola Cookies
Yummy cookies have crispy edges with a chewy center with sweet dried cherries.

- 1 cup or 2 sticks of butter
- 2/3 cups light brown sugar
- 1/3 cup Karo® Corn Syrup
- 1 egg
- 2 tsp of vanilla
- 2 cups of flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 tsp cinnamon
- 3 cups plain granola
- 1 cup dried cherries
- First, in a mixing bowl mix together butter, light brown sugar and Karo® Corn Syrup until smooth- about 2 minutes.
- Next, add egg and vanilla and mix for about 2 minutes.
- Then, in a separate bowl, add flour, baking soda, salt and cinnamon.
- Next, add 1/3 of the flour mixture at a time to butter sugar mixture mixing well after each addition. Mixture will be light and fluffy.
- Then, stir in granola and cherries until well combined.
- Next, refrigerate cookie dough for one hour. Dough will be easier to handle.
- Then, preheat oven to 350F.
- Next, add parchment paper to cookie sheets or spray with oil. Put one spoonful of cookie dough spaced two inches apart from each side.
- Then, bake on 350F for 10-12 minutes. Let cool on cooling racks.
I love making chewy cookies for my boys (husband included) because they’re faces light up when they see them sitting on the kitchen counter when they get home from school or work. As a mom and wife, it warms my soul.
