This simple side dish of Butternut Squash in air fryer is seasoned with fresh rosemary, olive oil, garlic and onion. It’s moist in the middle with crispy edges. It’s low calorie, Vegan and gluten-free.
Butternut squash is so good no matter how you make it. I especially like it in soup- Roasted Butternut Squash Soup with Rosemary and Ginger and Curry Butternut Squash Soup Coconut Milk.
I’ve also made vegetarian chili with it.
This is a fantastic side dish to go with nearly any meat and is wonderful to make as a Thanksgiving side dish. Look at that beautiful orange color that is so festive for Thanksgiving. It can be prepped ahead and cooked while not using any conventional oven space. The turkey needs a lot of room after all. It’s a great alternative to sweet potatoes.

Butternut Squash in Air Fryer
I like to buy the store-bought peeled and cubed butternut squash because it’s much easier and safer than trying to peel and cut it myself.
I added a dash of cayenne pepper to this dish but, that is optional.
First, cut the peeled cubed butternut squash into 1-2 inch cubes or prep a whole butternut squash if that’s what you have. Place in a large mixing bowl.
Next, add oil, rosemary, and dried seasonings and stir until butternut squash is coated.
Then, put the squash into the air fryer in a single layer. You may need to do it in batches unless you have one with trays. Cook on 400F for 20-25 minutes.
It’s delicious and so easy to prepare! This side dish is perfect to make for a quick, weeknight dinner or for holiday dinners when you need an easy and delicious side dish.

- 1 tbsp finely chopped fresh rosemary
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
