This tasty pasta dish is made with roasted Broccolini and cherry tomatoes and then mixed with spaghetti and goat cheese to make a filling nutritious, vegetarian meal in just 30 minutes with 6 ingredients!
I added this yummy recipe to my dinner rotation this year and it’s great when I need a quick dinner. Broccolini tastes good sauteed or roasted with EVOO and garlic. It’s also wonderful mixed with pasta just like broccoli rabe. See the differences between broccoli rabe and broccolini below.
I like roasted vegetables with EVOO and garlic and mixing them with pasta. It’s a great way to use up aging veggies especially wrinkled tomatoes. Adding goat cheese gives it more flavor thereby making it more yummy.
Broccolini with Pasta and Goat Cheese
Sometimes you just want to make a simple, vegetarian dish for dinner that’s quick and easy. Roasted Broccolini with Pasta and Goat Cheese is a restaurant quality meal you can make at home with few ingredients.
I buy my broccolini at Lidl which is a discount store similar to Aldi. There, I pay half for what I’d pay at the grocery store. What a great savings!
I’ve included some recipe substitutions below so, check them out too. But, first I’ll answer some of your questions about broccolini that you probably didn’t know. I surely didn’t.
What’s the Difference between Broccoli and Broccolini?
Broccolini is actually a cross (hybrid) between broccoli and Chinese broccoli and was invented in 1993. I bet ya didn’t know that! Broccolini is slightly sweeter and a bit more delicate than broccoli. It’s high in fiber and vitamins A and C. It’s a lovely alternative to broccoli.
What’s the Difference between Broccoli Rabe and Broccolini?
Believe it or not broccoli rabe is not related to broccoli at all like is broccolini. Broccoli rabe is in the turnip family! So, even though both broccoli rabe and broccolini have the same looking florets, they’re not related. Broccoli rabe is more bitter with an earthy flavor. Therefore, if you don’t like the taste of broccoli rabe because you think it’s bitter, you may like broccolini as it’s much sweeter.
