Their signature Winter White Cosmo was so delicious, I knew I had to make a copycat recipe so I could enjoy it at home for far less than $11 per cocktail. Therefore, I excitedly created the perfect Winter White Cosmo copycat recipe! It was my number one recipe in 2021 and highly rated!
St. Germain Elderflower Liqueur
My latest obsession is the popular Bonefish Grill Crushed Pineapple Martini! One of the reasons I like it so much is because it’s made with St. Germain Elderflower liqueur. It’s so fragrant and tasty. Although it’s pricy, it is worth it! It’s top shelf for a reason- QUALITY.
I make a SUPER DELICIOUS Limoncello Elderflower Champagne Cocktail with St. Germain. It’s is absolutely perfect for brunch (Easter and Mother’s Day Brunches for sure!)
Plus, if you like Bonefish Grill’s Crushed Pineapple Martini and their Winter White Cosmo, you’re in luck because both of them use St. Germain Elderflower liqueur!
However, because the liqueur is pricy and not a common liqueur, I do offer a substitute below. But, please read the NOTE at the end. And don’t dare leave this page without checking out all of my cocktail recipes! I know you’ll find others you’ll want to try.
This Crushed Pineapple Martini is a wonderful summer-style cocktail to drink in February when you feel like spring is never going to come. It reminds you that warm weather is around the corner, just a few weeks away.
Of course, it’s perfect for a summer cocktail to sip on your deck while you’re watching your husband cut the grass. Yes, I do this and he doesn’t even give me a jealous look. He just grins.
What’s great about this cocktail is you can control the amount of sweetness. Add a little less (or no) simple syrup if you’d like it to be not as sweet.

With prices skyrocketing, I understand if you need a substitute for elderflower liqueur and you may not even have ever heard of it. Well, you’re in luck because I’ve got a cheaper substitute! Elderflower syrup! It’s pictured below. I’ve also used it in my Winter White Cosmo too.
Copycat Bonefish Grill Crushed Pineapple Martini

Ingredients
- 4- 1 1/2 inch fresh pineapple chunks (without skin) (or use 1-2 tbsp of pineapple juice)
- 1 cup of ice cubes
- 2 oz coconut rum
- 1 tbsp St. Germaine Elderflower Liqueur (or elderflower syrup)
- 1 tbsp simple syrup
- 2 tsp lemon juice
- 1 thin pineapple wedge with skin for garnish (optional)
Instructions
- First, add pineapple chunks to a cocktail mixer and muddle (muddler is pictured above) until nearly pulverized.
- Next add the ice cubes.
- Then add the rum and elderflower liqueur (or elderflower syrup.)
- Next, add the simple syrup and lemon juice.
- Then, put the lid (and ball) on the shaker and mix until well combined.
- Next, strain out the cocktail.
- Last, add a pineapple wedge for garnish.
NOTE: If you’re substituting elderflower syrup for the elderflower liqueur, you may want to add less or none of the simple syrup as it may become too sweet. If you don’t have fresh pineapple, you may use 1-2 tbsp of pineapple juice.
How to Make Simple Syrup
Add 1 tbsp of sugar to 1 tbsp of water and heat one stove top for a minute (or 40 seconds in microwave) and stir until it becomes a syrup. Simple syrup is a one-to-one ratio. This simple recipe comes in handy when you have all of the ingredients, except for simple syrup!
The cocktail mixer pictured above has both the shaker and the muddler to crush the pineapple. I use the muddler to crush mint leaves for my mojitos and Limoncello Moscow Mules too.
This refreshing pineapple martini is a tasty cocktail you can drink any time of year and is super easy to make! Indulge yourself but, please drink responsibly.
