They have fresh strawberry sauce IN the cheesecake batter which gives them even more fresh strawberry flavor and makes them pink too! Perfect for Valentine’s Day or when strawberries are in season.
I know a thing or two about making cheesecakes. I’ve been making them for years…many years! They always come out delicious and I often get compliments on them. They are so easy-to-make.
I made these cute pink strawberry mini cheesecakes because my strawberry, dessert-loving father-in-law was coming over and I didn’t want to disappoint him by not serving dessert. He LOVES dessert. These mini masterpieces came out so good, I had to share them with you.

Best Mini Strawberry Cheesecakes with Fresh Strawberry Sauce
Making these little bites of heaven is easy! I make them in much the same way I make cheesecake except I added heavy cream and I made an absolutely delicious strawberry sauce that I put both inside the batter and on top of the mini cheesecakes.
Fresh Strawberry Sauce Recipe:
First, I made the fresh strawberry sauce. It’s just a matter of combining 1 quart of fresh strawberries, 1/2 cup of sugar and juice of 1/2 of a lemon in a sauce pan and cooking it for 20 min on med/low. Watch the sauce though because it can boil over. That’s when I turned the heat down to low.

Next, I made the cream cheese mixture with cream cheese, sugar, vanilla, eggs and heavy cream, which is optional. I don’t usually make my cheesecakes with cream but, I had some on hand so, I added it. It makes it a little creamier. TIP: Mix the cream cheese mixture for 2-3 minutes because the cheesecake will become creamier!

Then, when my strawberry sauce was done cooking, I added about 1/2 cup of it to the cream cheese batter.
Next, I poured the cream cheese batter into the mini graham cracker pie shells and baked them on 350F for 20 minutes or so.
Then, I let them cool on the counter for 15 min and then put them in the refrigerator for two hours to set.
Finally, I spooned some fresh strawberry sauce on top before serving them.
Directions for a Whole Strawberry Cheesecake
Make this into one single cheesecake by doubling the batter and strawberry sauce. Make a graham cracker pie crust with 1 1/2 cups of graham cracker crumbs, 6 tbsp melted butter and 2 tbsp sugar. Press into a 9″ spring form pan and bake for 10 min on 325. Let cool before filling with batter. Then, bake the whole cheesecake for 55-70 min (depending upon your own oven) or until middle is set.
My in-laws loved the mini strawberry cheesecakes! They were so full of strawberry flavor!

Best Mini Strawberry Cheesecakes with Fresh Strawberry Sauce
Ingredients
- 2 8 oz cream cheese bars
- 1 cup sugar, divided
- 1/2 tsp vanilla
- 1/4 cup heavy cream optional
- 2 6 ct. packages mini graham cracker pie crusts
- 2 eggs
- 1 qt fresh strawberries
- 1 juice of lemon
Instructions
- Wash, hull and cut strawberries in half. Place them in a small sauce pan along with 1/2 cup of sugar and juice of one lemon. Cook on med/low heat for 20 min or so until the sauce reduces and becomes a little thick.
- Meanwhile, preheat oven to 350F.
- In a mixing bowl, add cream cheese, eggs, 1/2 cup of sugar, vanilla and heavy cream. Mix for 2-3 minutes. Scrape sides of bowl midway through.
- When strawberry sauce is finished cooking, add 1/2 cup of strawberry sauce to the cream cheese mixture. Mix until combined. Scrape bowl and stir before removing.
- Gently pour cream cheese mixture into graham cracker pie shells. Bake in 350F for 20-25 min or until middle is set. Let cool on counter for 15 min. Place in refrigerator for 2 hours before serving.
- Top with strawberry sauce before serving.
Love the idea of adding strawberry sauce into the cheesecake itself as well as topping them with it. They must be delicious.
