Baked Apricot Glazed Salmon is made with a sweet and slightly tangy apricot glaze that’s flavored with fresh garlic and thyme leaves. It’s a DELICIOUS 30-minute meal that makes for an EASY restaurant-quality weeknight dinner. Gluten-free and low-calorie.
When discovered how good my Apricot Ginger Steakhouse Pork Chops were, I knew I need to make a similar glaze for salmon. It’s so, so good on salmon and has become my new favorite way to make salmon.
Although, I must admit, I do like Honey Garlic Salmon and Honey Lemon Salmon a lot too.
Salmon is healthy, filling and simply delicious. Even my picky kids will eat it.

Apricot Glazed Salmon

Ingredients
- 1 lb of fresh salmon (or defrosted frozen salmon)
- salt and pepper to taste
Apricot Glaze Ingredients
- 6 garlic cloves
- 1 tbsp of fresh thyme leaves
- 1/2 cup apricot preserves (I used Polaner All Fruit brand)
- 2 tbsp lime juice
- one dash cayenne pepper (optional)
First, preheat the oven to 375F.
Meanwhile, make the apricot glaze by putting of the ingredients into a small saucepan and cooking it on med/high heat until it begins to bubble.
Next, oil spray a baking dish and put the salmon in it. If it has skin on one side, put that side down.
Then, pour the apricot glaze over the salmon and bake it for 25 minutes.

Note: thicker salmon may take a few minutes longer to cook.

Ingredients

Apricot Glaze
- 1/2 cup apricot preserves
- 2 tbsp lime juice
- 6 cloves garlic, minced
- 1 tbsp fresh thyme leaves
- 1 dash cayenne pepper optional
Instructions
- First, preheat oven to 375F.
Apricot Glaze
- Next, in a small sauce pan on medium high heat, add apricot preserves, garlic, thyme leaves and lime juice. Also, add cayenne pepper if desired. Stir and turn off once it begins to bubble.
- Then, oil spray an 8"x8"x3" baking dish. Place salmon in it. If it has skin on it, place the skin side down. Add salt and pepper to taste.
- Next, pour the apricot glaze over the top of the salmon.
- Then, bake at 375F for 25 minutes. Thicker salmon may need a few minutes longer.
